250g tempered chocolate

Walnut Coffee Creams
60ml (1/4 cup) thick cream
2 teaspoons liquid glucose
1 1/2 teaspoons instant coffee powder
90g (1/2 cup) icing sugar - plus extra
90g (3oz) plain dark chocolate
40 walnut halves or large pieces of walnuts

Place the cream and liquid glucose in a small saucepan, and
cook over low heat until the glucose disolves. Remove from the heat and add the coffee powder, mix thoroughly and cool. 2. Stir in the sugar, firm peaks shoud form. Keep adding more sugar if necessary. Allow to chill for 2 hours or overnight. |

| 3. Melt
the chocolate, stir until smooth. Using a teaspoon drop melted chocolate onto a tray covered with greaseproof paper, and flatten to form small chocolate buttons. Allow to set. |

prepared filling into a piping bag fitted with a nozzel. Pipe around the edge of each chocolate button. |
