At the end of the cooking time the cheesecake may still appear to be soft in the center but as the cheesecake cools it will become firmer. If you do over bake the cheesecake it develops a grainy texture and will shrink, crack and become dry as it cools. When the baking time is completed turn of the heat and leave the cheesecake to cool in the oven, this will help set the soft center and prevent it from falling. Once the cheesecake has cooled you can place in the refrigeratoruntil it has completely set. Large cheesecakes are best made the day before, these should be kept in the refrigerator overnight so the filling has a chance to set properly.
