Cookies
Makes 24 Large Cookies
2 1/2 cups of plain flour (all-purpose flour)
1/2 cup
unsweetened cocoa powder, sifted
1 1/2 tablespoons
ground cinnamon
1 tablespoon
instant coffee powder
2 teaspoons finely
ground coffee
1 teaspoon baking
soda
1 teaspoon baking
powder
1/4 teaspoon salt
1 cup cubed
unsalted butter at room temperature
1 1/2 cups caster
sugar (granulated sugar)
1 cup packed brown
sugar
1 teaspoon vanilla
2 large eggs
2 cups semisweet
chocolate chips
Preheat
the oven
to 180C (350F, Gas Mark 4)
1. Place the
flour, cocoa powder, instant coffee powder, cinnamon, finely ground
coffee, baking powder, salt and baking soda in a medium size bowl, stir
to combine.
2. In a
large
bowl using an electric mixer beat the butter, sugar and brown sugar
until light and fluffy.
3. Beat in
the vanilla and then eggs one at a time, beating well after each
addition.
4. Add the
flour mix and mix until just combined. Fold in the chocolate
chips.
5. Lightly
grease and flour baking sheets.
6. Place
heaping tablespoons of dough onto the baking sheets, leaving about 8 cm
(3 inches) space between dough.
7. Bake in
preheated oven for about 12 minutes or until the cookies are slightly
firm to the touch.
8. Leave to
cool completely on the tray as they will be soft while warm.
