Makes 18 Chocolate Chip Cookies
175g (6oz) plain flour (all purpose flour
1 teaspoon baking powder
125g (4 1/2 oz) soft butter
90g (3 oz) light brown sugar
5 tablespoons caster sugar (fine sugar)
1/2 teaspoon vanilla essence
1 large egg
125g (4 1/2 oz) dark chocolate chips
Preheat the oven to 190C (375F, Gas Mark 5)
1. Mix all the ingredients in a large mixing bowl, beat until well combined.

Lightly grease 2 baking
trays. Using a tablespoon place heapfulls of mixture on to the trays. Space them well apart to allow for spreading during cooking. |

Makes 16 Large Cookies
125g (4 1/2 oz) butter
185g (6 1/2 oz) soft brown sugar
1 teaspoon vanilla essence
1 large egg - beaten
1 tablespoon milk
215g (7 1/2 oz) plain flour (all purpose flour), sifted
1 teaspoon baking powder
250g (9 1/2 oz) dark chocolate chips
Preheat the oven to 180C (350F, Gas Mark 4)
1. Line a large baking tray with baking paper.
2. Using an electric mixer cream the butter and sugar in a large bowl. Gradually add the egg and vanilla extract beat well.
3. Stir in the milk. Fold the sifted flour and baking powder into the creamed butter, egg mixture.
4. Stir in the chocolate chips.
5. Drop level tablespoons of the mixture onto the baking tray leaving space about 4cm (1 1/2 inch) between them. Alternately roll tablespoons full into balls and then place on tray.
6. Lightly press the dough with the back of a floured fork or your fingers.
7. Bake for 15 minutes or until golden. The cookies will be very soft so slide the baking paper and cookies onto a wire rack and cool.
Makes 24 Large Cookies
2 1/2 cups of plain flour (all-purpose flour)
1/2 cup unsweetened cocoa powder, sifted
1 1/2 tablespoons ground cinnamon
1 tablespoon instant coffee powder
2 teaspoons finely ground coffee
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 cup cubed unsalted butter at room temperature
1 1/2 cups caster sugar (granulated sugar)
1 cup packed brown sugar
1 teaspoon vanilla
2 large eggs
2 cups semisweet chocolate chips
Preheat the oven to 180C (350F, Gas Mark 4)
1. Place the flour, cocoa powder, instant coffee powder, cinnamon, finely ground coffee, baking powder, salt and baking soda in a medium size bowl, stir to combine.
2. In a large bowl using an electric mixer beat the butter, sugar and brown sugar until light and fluffy.
3. Beat in the vanilla and then eggs one at a time, beating well after each addition.
4. Add the flour mix and mix until just combined. Fold in the chocolate chips.
5. Lightly grease and flour baking sheets.
6. Place heaping tablespoons of dough onto the baking sheets, leaving about 8 cm (3 inches) space between dough.
7. Bake in preheated oven for about 12 minutes or until the cookies are slightly firm to the touch.
8. Leave to cool completely on the tray as they will be soft while warm.
