Chocolate Chip Pie Recipe

Make a Chocolate Chip Pie with Coconut

serves 8


Preheat oven 180C (350F, Gas Mark 4)


1 cup sugar

1 cup semi sweet chocolate chips

1/2 cup plain flour (all purpose flour)

1/2 cup flaked coconut

pinch of salt

1/2 cup of melted unsalted butter

2 large eggs

1 teaspoon vanilla

1 x 23cm (9 inch) shortcrust pastry shell blind baked  or use a ready made pastry shell or your own short crust pastry recipe.




1.  Combine the sugar, chocolate chips, flour, coconut and salt in a large mixing bowl.

2.  Add the slightly cooled melted butter,  eggs and vanilla stir well.

3.  Pour the mixture into the blind baked pastry shell.

4.  Bake in the preheated oven of about 45 minutes or until a skewer inserted into the center comes out clean.

5.  Cool completely on a wire rack.

6.  Lightly dust the top of the cooled chocolate chip pie with icing sugar (confectioner's sugar).
