When making chocolate strawberries it is important that you select your strawberries carefully. They should be large, fresh and full of flavor. If the strawberries that you select don't have these qualities you can be disappointed in the end result.
You will then have to select the chocolate that you are going to use will it be white, dark or milk chocolate. Most of your well known brands of chocolate that you can purchase of the shelf in the supermarket will work well for this but do try to get one that has a high percentage of cocoa fat preferably over 30% if you can.
If you want to make white chocolate covered strawberries a little more care will have to be taken when melting this chocolate as it does not contain any cocoa fat you will have to melt it at a lower temperature - just follow the instructions on the packaging and you should be fine.
When dipping strawberries in chocolate you want your finished chocolate covered strawberries to be visually appealing to the eye as this will be the first thing that is seen.
So if you can purchase large ripe strawberries that still have a long stem on them - these should then be washed and wiped dry and then left out to air dry for several hours before you dip them.
The reason for this is that if you don't have completely dry strawberries at room temperature you can cause the chocolate to become unworkable because of the water on it - chocolate and water does not mix well together.
Next you will need to dip the strawberry into the melted chocolate covering about 75% of the strawberry. You should then carefully place it onto a sheet of waxed or greaseproof paper and allow to dry, if you would like a thicker coating of chocolate you can repeat the dipping and drying process again.
