Chocolate Candy Making -  Lollipops

To make chocolate lollipops you will need lollipop molds and sticks. 

The lollipop molds are avaiable in many different shapes such as bunnies, hearts, flowers, starfish and trees.



The lollipops usuallly look more appealing when made with white chocolate which can be colored just like the chocolate flowers in the above picture.

Lollipop molds have been designed so that a lollipop
stick  can sit into the melted chocolate and when set it will be secured into the candy.








Making Chocolate Flower Lollipops


To make chocolate flowers you will need to have a chocolate flower lollipop mold.  

1.  You will start by painting the centers of the flowers with a little white  tempered chocolate in a color of your choice (use oiled based food colors).  

2.  Apply the colored chocolate with a small artists brush to the centre of the chocolate molds.  

3.  Place the mold in the refigerator to set this will take a few minutes.

4.  Remove the mold from the refigerator and fill the mold with melted white chocolate or a contrasting color (be sure that the melted chocolate has cooled slightly before pouring into the mold; you don't want the centers to melt)

5.  Gently tap the mold on a bench to release any air bubbles.  

Lift the mould and check the underside of the mould.  If any air bubbles remain, tap the mold again or insert a toothpick into the air bubble.  

If needed add more chocolate and tap again to smooth the surface.

6.  Slide the stick into the lollipop groove and twist from side to side to ensure that it is firmly  attached to the chocolate.

7.  Allow to set in the refigerator before removing from the mold.

8.  To remove turn the mold over and gently tap on a firm surface.

If the chocolate candy does not release after two taps, return to the  refrigerator for a few more minutes and try again.

This same method can be use to make other novelty chocolate lollipops.
