Quick  and Easy Chocolate Mousse Pie 

Serves 8
Makes one chocolate  mousse pie in a 23cm (9 inch) springform pan


250g (9 oz) plain chocolate biscuits

6 tablespoons unsalted butter melted

200g (7 oz) dark chocolate chopped

1/2 cup strong brewed coffee

1 1/4 cups whipping cream (heavy cream)

1 teaspoon vanilla

Pinch of salt


Make the Base of the Pie


1.  Grease a 23cm (9 inch) spring form pan.

2.  Place the biscuits in a food processor and grind finely.

3.   With the motor running slowly add the butter and process until just blended.

4.  Press the mixture onto the bottom and one third of the way up the sides of the springform pan.



Make the Pie Filling


1.  Melt the chocolate with the coffee in a heatproof bowl over a saucepan of simmering water (make sure that the bottom of the bowl does not sit in the water), whisk until smooth.

2.  Remove from the heat and allow to cool for about 5 minutes.

3.  Whip the cream, vanilla and salt with an electric mixer in a large bowl, until the cream forms soft peaks when the beater is lifted.

4.  Fold the cooled chocolate mixture into the cream, do this in batches, just until blended.

5.  Pour the mousse into the pan and smooth the top.

6.  Cover and refrigerate for at least three hours or overnight.

7.  To serve remove the sides of the pan and cut into wedges.
