Below you will find chocolate muffin recipes as well as the steps that you need to create a perfect muffin that is not heavy in texture.
1. Start your chocolate muffin recipes by preparing your muffin tin by slightly spraying with oil or line with paper cases.
2. Combine all the dry ingredients in one bowl and all the wet ingredients in another.
3. With a wooden spoon make a well in the center of the dry ingredients.
4. Add all of the liquid mixture into the well of the dry mixture.
5. Stir the mixture only until it is moistened. Don't over mix it as this will result in a heavy texture. It should have a lumpy center.
6. Fill the prepared muffin tin (or muffin cases) only two thirds full to allow for rising. Use a rubber spatula to push the batter from a spoon into the muffin tin.
7. Bake the muffins according to the recipe. Don't overcook as they will turn out dry and tough.
Muffins are done when they are golden brown, firm to the touch, come away from the sides of the pan and a skewer inserted in the center comes out clean and dry.
For the double chocolate muffin recipe
Double Chocolate Muffins
Makes 24 medium size muffins
3 1/2 cups self-raising flour
2 tablespoons unsweetened cocoa powder
3/4 cup brown sugar
170g (6oz) white chocolate bits
170g (6 oz) milk chocolate bits
4 eggs beaten
2/3 cup natural yoghurt
2/3 cup milk

Preheat oven 190C (375F, Gas Mark 5)
For these banana chocolate chip muffins I have used white chocolate chips, but you could use dark chocolate chips as well.
These muffins are moist ad light in texture with a great banana taste.
When I first made this recipe it asked for 1/2 cup of sugar which I found too sweet so I have reduced the amount of sugar to 1/4 cup, but if you like a sweet muffin use 1/2 cup of sugar.

Banana Chocolate Chip Muffins

1/4 cup sugar
1/3 cup vegetable oil
1 cup mashed banana
1 beaten egg
300g (10 oz) white chocolate chips
1 cup self raising flour
1/2 teaspoon salt
