Makes
one chocolate pecan pie 23cm (9 inch)
For the crust 1 3/4 cup of plain flour (all purpose flour) 5 tablespoons of caster sugar (superfine sugar) 1/2 cup unsalted butter at room temperature 1 large egg, beaten Rind of one orange finely grated For the Filling 3/4 cup light corn syrup 3 tablespoons of light brown sugar 140g (5 oz) dark chocolate, broken into small pieces 4 tablespoons of butter 3 large eggs, beaten 1 teaspoon vanilla 1 1/2 cups of pecans Make the Crust of the Pie1. Grease a 23cm (9 inch) tart pan. 2. In a bowl sift the flour and sugar, add the butter and work with your fingertips until combined. 3. Add the beaten egg and orange rind and mix to a firm dough. If the mixture is dry add a little water. 4. Roll out the pastry on a lightly floured surface, and line a 23cm (9 inch) tart pan, pressing the dough into the base and sides. 5. Chill the dough for about 30 minutes. Make the Pie FillingPreheat
the oven to 180C (350F, Gas Mark 4)

Mix the syrup, sugar and chocolate and butter in a small
saucepan, gently heat until the chocolate has melted.
2. Allow the mixture to cool slightly before adding the beaten eggs and vanilla mix well. 3. Arrange the pecans in the base of the pie crust and gently pour in the chocolate filling. 4. Place the pie tin on a baking tray and bake for about 50 - 60 minutes or until set. 5. Remove from the oven and allow to cool in the pan. |
