Dark Chocolate Cheesecake

Recipe for Dark Choc Cheesecake 

Makes one 22cm (9 inch) cheesecake


Preheat the oven to 135C  (275F)


For the base of the dark chocolate cheesecake

1 1/2 cups of vanilla wafers

6 tablespoons of melted butter

1/4 cup of sugar

1.  Crush the vanilla wafers by placing them in a sturdy plastic bag and roll the bag on a work surface with a rolling pin.

2.  Place the crumbs in a mixing bowl and add the melted butter and sugar.  Mix very well.

3.  Press the mixture onto the bottom of a greased 22cm (9 inch) baking dish and slightly up the sides.  Smooth the mixture along the bottom to create a smooth surface.


For the filling

140g (5 oz) Dark chocolate cut into small pieces

 680g (1 1/2 lbs) cream cheese

3/4 cup of sugar

3 large eggs

1 teaspoon vanillia essence

1 cup of sour cream


1.  Melt the chocolate.

2.  While the chocolate is melting use an electric mixer to beat the cream cheese with the sugar until the mixture is smooth and light.

3.   Add the eggs and the vanilla mix well.

4.  Stir in the melted chocolate and the sour cream into the cream cheese mixture and blend until well combined.

5.  Pour the chocolate mixture into the prepared crust and bake for 1 hour and 15 minutes.

6.  Turn the oven off and allow the cheesecake to cool in the oven.

7.  Chill before serving.
