How to Make Chocolate Bars - There are a number of different ways that you can make chocolate bars. Chocolate candy bars can be made using melted chocolate and candy molds which can be either filled or unfilled.

For the unfilled chocolate bars simply pour melted chocolate into your desired mold and allow to set before removing.

For filled chocolate bars the melted chocolate is applied to the inside of the mold to create a hollow it is allowed to set and then a filling can be added to the inside, more chocolate is then added to cover the filling and once this has set the chocolate can be removed from the mold.

Chocolate bars can also be made using various ingredients that can include flour, nuts, cocoa powder, eggs and butter. Depending on the recipe they can either be baked or unbaked. Chocolate bars can be quite dense and rich in texture and are cut into squares or bars.

Baked Chocolate Chip Cookie Bar Recipe - makes 36 bars

2 cups of firmly packed light brown sugar
2/3 cup softened salted butter (at room temperature)
2 large eggs (at room temperature)
1 teaspoon vanilla extract
2 3/4 cups self raising flour
1 cup dark chocolate chips
1 cup white chocolate chips (or you could use chopped roasted nuts like pecans or walnuts)

optional zest of 1 orange

Preheat oven to 170C (325F)

Line a 23cm X 34cm (9inch X 13inch) tin with foil, allow the edges of the foil to go over the sides of the tin, this will allow you to easily remove the chocolate bar from the tin later. Spay or brush the inside of the foiled tin with oil.

In a large bowl beat the sugar, butter (and orange zest if using) until well combined - mix for about 5 minutes, and scrape down the sides of the bowl several times.

Add the eggs one at a time beating well before adding the next egg, mix until the mixture look light and creamy about 2 minutes.

Using a wooden spoon stir in the vanilla extract add the flour and chocolate chips mix well until just combined.

Spoon the dough into the prepared pan spreading evenly with your hands.

Bake for about 20 - 30 minutes until just cooked. You will know when it is ready when you insert skewer into the bar and it comes out clean. If you find that it is not quite ready after the stated time over it loosely with some foil this will stop it from getting too brown.

Remove from the oven and place the tin on a wire rack to cool completely before cutting into 5cm (2inch) bars.

Emily's Unbaked Roasted Nuts and Mini Marshmallow Chocolate Bars - makes 20 bars

400g cooking chocolate - milk
160g hazelnuts- roasted
130g pecan nuts - roasted
100g mini marshmallows
100g flaked almonds- roasted

Line a 20cm X 30cm (8inch X 12inch) container with aluminum foil and sprinkle to bottom with half of the almond flakes.

Melt the cooking chocolate in a large heat proof bowl, once the chocolate is completely melted add the hazelnuts, pecans and marshmallows mix well.

Pour into the prepared container and spread the chocolate mixture evenly and sprinkle with the remaining almonds and press lightly into the chocolate with the back of a spoon.

Cover and place in the fridge for about 2 hours until set. Remove from the container and remove the foil cut into squares.
