Best Moist Chocolate Cake Recipe

How to make chocolate cake? The best moist chocolate cake recipe is one that makes a cake which is creamy and light with an intense chocolaty flavor.

This following recipe is a simple one that gives you just this.

This cake uses chocolate chips that have been ground which gives the finished cake a nice creamy and smooth texture.

This cake is one of my personal favorites and a little goes along way because of its richness.

It tastes great with freshly whipped cream and slices of fresh strawberries just the perfect combination.

A buttercream frosting also goes well with this cake, you can make just a basic buttercream or for more flavor try coconut or a chocolate buttercream frosting recipe.

2 cups self raising flour
2/3 cup cocoa powder
1/2 cup salted butter
1 cup white sugar
1 cup of brown sugar
3 large eggs - separated
2 teaspoons vanilla extract
1/2 cup buttermilk
1 cup milk

1 cup of dark chocolate chips finely ground

Preheat oven to 180C (350F)

1. Grease and flour two 23cm (9 inch) round cake tins - if you like you can also line the bottom of the tin with greaseproof paper.

2. Sift the flour and cocoa power together.

3. Place the butter and white sugar together in a large bowl and beat for about 5 minutes.

4. Next add the brown sugar, vanilla and egg yolks to the mixtire and beat well for 2 minutes.

5. Add the flour, buttermilk and milk alternately to the mixture until combined.

6. Add the unbeaten egg whites and beat for about 2 minutes.

7. Using a wooden spoon fold in the ground chocolate chips.

8. Pour the mixture evenly between the two tins.

9. Bake for about 20 - 25 minutes or until cooked. Your cake is done when the center of the cake springs back when lightly touched.

10. Allow the cake to cool in the tin for about 5 minutes before turning onto a wire rack to cool completely before decorating.

To decorate this cake

I have used a Chocolate Butterecream Frosting Recipe, sandwich the two cakes together using the same chocolate buttercream frosting.

Working from the outside edge place chocolate coated sultana (or chocolate coated peanuts, Maltesers etc) around the edge creating three circles.

250g (8oz) of washed and dried strawberries have been arranged neatly in the center.

I have just made one large cake by baking it in a larger tin 30cm (12 inch). You will need to increase the baking time is to about 40 -50 minutes or until cooked.

Just keep an eye on the cake and check every so often if it looks like it is browning too quickly and is still undercooked, cover the top completely with some aluminum foil this will stop it from browning and burning.

You can also turn down the temperature a few degrees and bake until fully cooked - as in step 9 above.
