Walnut and Almond Brownies

These walnut brownies are made from a chocolate brownie recipe that makes a delicious and moist cake like brownies and with the addition of ground almonds it is simply irresistible.

 

 


Walnut Brownies Makes 15 large walnut browniesFor the Chocolate Brownie Cake

300g (10.5oz) dark chocolate broken into small pieces
180g (6.3oz) butter cut into cubes
180g (6.3oz) brown sugar
3 tablespoons strong black coffee
4 large eggs
115g (4 oz) ground almonds
100g (3.5oz) walnuts cut into large pieces
1 heaped teaspoons baking powder
115g (4 oz) flour

 

For the Icing

50g (1.7oz) dark chocolate
15g (0.5oz) butter
15 walnut pieces
Icing sugar for dusting

 

Pre heat oven to 170C (340F)

Line the base of a cake 30cm (11 inch) X 19cm (7.5 inch) X 4cm(1.5 inch) tin with baking paper.


1. Place the dark chocolate and butter in a large heat proof bowl and place over a pan of simmering water to melt.

2. When the chocolate and butter have melted remove from the heat and stir in the brown sugar and coffee until combined.

3. Allow the mixture to cool slightly before adding the eggs.

4. Add the eggs one at a time beating well after each addition. You will find that the mixture will become thick and glossy.

5. Gently fold in the ground almonds and walnuts.

6. Then fold in the sifted flour and baking powder, be careful not to over mix as the brownies will become hard when cooked.

7. Pour the mixture into the prepared tin and bake for about 20-35 minutes until set. A skewer should come out clean with a few crumbs clinging to it.

8. Remove from the oven and run a knife around the edge of the cake, the leave to cool in the tin.

To Make the Icing

Melt the chocolate and butter by placing in a small heat proof bowl and place it over a pan of simmering water, mix well and allow to come to room temperature.

Cut the chocolate brownie cake into 15 pieces and place about 1/2 teaspoon of the melted chocolate/butter icing into the centre and top with a walnut half. Dust with the icing sugar
